Your Oven Is Probably Lying to You
Domestic ovens are routinely 10–20°C out, hot spots vary by shelf, and fan settings change everything. Why your baking fails, and the cheap fix.
If your cakes brown on top before they cook through, if biscuits spread when they should hold, or if a recipe that works for everyone else fails for you, the most likely explanation is not your technique. It is that your oven is not the temperature it claims to be.
The gap between the dial and reality
Domestic ovens are commonly 10–20 °C away from their set temperature, and a meaningful share are worse. Consumer testing organisations have repeatedly found ovens running 20–30 °C out of calibration, in both directions.
There are three separate reasons.
The thermostat measures one point. It reads the air near a sensor, usually at the back wall. That is not where your cake is.
Ovens cycle. The element heats until the sensor is satisfied, then switches off until the temperature falls below a threshold. The actual temperature oscillates around the set point, sometimes by 15 °C either side. What the dial promises is an average, not a constant.
Calibration drifts. Thermostats age. An oven that was accurate when installed may not be five years later.
The fix costs about the price of a coffee
An oven thermometer. Hang it on the middle shelf, set the oven to 180 °C, and wait twenty minutes after it claims to have preheated.
Whatever it reads is your real temperature. If it says 165 °C, then every recipe you have ever baked has been 15 °C cool, and you now know to set 195 °C when a recipe says 180 °C.
This single measurement explains more baking failures than any amount of technique advice.
Preheating takes longer than the beep
The preheat indicator tells you the air has reached temperature. It does not tell you the oven has.
The walls, shelves and any stone or tray inside are still cold, and they will pull heat out of your food. Professional guidance is to preheat for at least 20 minutes after the beep, and considerably longer if you are baking on a stone.
This matters most for anything that relies on an initial blast of heat: bread, pizza, choux pastry, Yorkshire puddings.
Fan ovens change the arithmetic
A fan circulates air, which transfers heat to food much faster. The standard adjustment is to set a fan oven about 20 °C lower than a recipe written for a conventional oven.

Two mistakes are common here. The first is ignoring the adjustment entirely, which overbakes everything. The second is applying the temperature reduction and shortening the time, which undercooks it — do one or the other.
Almost every cookbook and recipe site quotes conventional temperatures unless it explicitly says otherwise. If a recipe gives a single number with no note, assume conventional.
Hot spots, and why you should rotate
No oven heats evenly. The back is usually hotter than the front, the top hotter than the bottom in a conventional oven, and the area near the element hottest of all.
The classic test: cover a shelf with slices of white bread and grill or bake until they colour. The pattern that emerges is your oven's hot spot map, and it is worth knowing.
The practical response is to rotate trays halfway through anything that bakes longer than about fifteen minutes. Fan ovens are much more even, which is their genuine advantage over conventional.
Opening the door
Every time you open the door, the temperature drops 20–30 °C and takes several minutes to recover.
For a roast, this is irrelevant. For a soufflé, a cake in its first twenty minutes, or bread during oven spring, it can be the difference between success and a sunken middle. Use the light.
The short version
- Buy an oven thermometer and find out what your oven actually does.
- Preheat 20 minutes past the beep.
- Subtract 20 °C for a fan oven, and do not also cut the time.
- Rotate trays halfway.
- Stop opening the door.
